BORDEAUX BLANC SEC

The white BORDEAUX is the fruit of a slightly crazy desire to make a dry wine from Sémillon grapes affected by noble rot.

The wine comes from strictly selected plot (more than 60 years old vines) situated on a remarkable soil of clay-limestone in the Sauternes geographic area.

GEOGRAPHICAL SITUATION/ PARCEL

Botrytis cinerea, when it develops in a particular form named “noble rot” is at the origin of the great sweet white wines of Sauternes, from the Semillon grape variety.

Moreover, Botrytis cinerea colonises the grapes in a heterogeneous way. Thus, a single grape can present all stages of evolution of the fungus : berries at maturity, full rotten and roasted rotten.

It is the profil of Semillon grapes that is wanted for the production of Bordeaux Blanc Sec.
